3 pkg. or 2 T. 3/4 t. yeast
3 c. warm milk
6 T. butter
3 T. sugar
1 T. salt
7 1/2 c. flour
dark cinnamon sugar
1/2 c. melted butter

Caramel Glaze:
2 T. corn syrup
1/4 c. butter
2/3 c. brown sugar
(1/2 cup chopped walnuts or pecans)

Cinnamon sugar:
cinnamon and sugar mixed to your preferance

Heat up butter and milk on the stove or microwave (not too hot). Dissolve yeast in milk, add sugar and salt. Then gradually add flour, making bread dough. Let rise in a warm place till doubled in size. Punch down, divide dough in half and roll out each piece into a rectangle. Sprinkle generously with cinnamon sugar. Roll up and cut each roll into 12 pieces. Brush equally with the 1/2 cup melted butter. Place in 2 13x9's. You can freeze at this point or place in the refrigerator. If making ahead you will have to thaw and let rise and continue recipe. Let rise until double, the rolls should fill the pan. Bake at 375º until golden brown, about 20 minutes. Top with caramel. To make caramel: (my kids like their rolls with lots of caramel so we double or triple it). Combine ingredients in a saucepan and cook until all sugar is dissolved and the mixture is hot and bubbling, stirring constantly. You can add chopped nuts to the caramel if desired.

This recipe was given to our family by the Kowalski family and it has been a favorite ever since. When I first started playing with this recipe, I would change the amounts, freeze or make a day ahead. The kid's response to all my playing with the recipe was "you don't have it right yet, keep practicing". They love cinnamon rolls.
