2 T. Butter
1/3 c. Unbleached flour
1 1/2 c. Milk
1/3 c. Sour cream
1 tsp. dry mustard
Salt and pepper to taste
16 oz. pkg. of favorite pasta
1 lb. mix of jack and sharp cheddar cheeses

Preheat oven to 350º F. Boil pasta according to package directions. In a separate saucepan, melt butter. Add flour and whisk together. Stir in mustard. Slowly add milk, stirring constantly to form a roux. Reserve 2 oz. of cheese, add the rest to sauce along with sour cream and salt and pepper. Stir until cheese is melted and sauce is smooth. Combine sauce with pasta and pour into a greased baking dish. Sprinkle with remaining cheese. Bake for 20 minutes.
