1 pound of each of the following meats:
- bacon
- sausage
- ground beef or steak tips

1 can kidney/chili beans (14 oz)
1 can black beans (14 oz)
2 cans tomato sauce (14 oz)
1-2 packets of chili seasoning mix
4 large fresh jalapeņos
2-4 fresh habaneros (optional)
1/2 Tablespoon dried crushed chipotle peppers (optional)

Cook bacon whole-- make it crispy. Leave the oil in the pan. Cook the sausage in the bacon grease. Scoop out the sausage and brown the ground beef in the same grease. Strain the grease out. Throw all of the meat the beans tomatoes and the seasoning packet(s) into a large crock pot. Turn it on low and stir it up.

Take the jalapeņos and habenaros and cut slices in the sides of the of the peppers. Stick the peppers in the chili so that the tops are poking out giving you little handles for later. Throw in the chipotle if you want it.

Let this cook for at least 1 hour on low. I suggest at least 4 hours if you have the time. If things start to dry out throw in some water. Before you serve take out the chilis and chop them up as finely as possible. Dump it in seeds and all. Give it one last stir and throw it in a bowl.

I find that even the mild version of this is too spicy for some. Adding cheese and or sour cream is a great idea.
