2 c. water
2 cubes chicken bouillon
1 clove garlic, minced
1 c. uncooked quinoa
1/2 c. chopped kalamata olives
1/2 c. crumbled feta cheese
1/4 c. chopped fresh basil
1/2 c. quartered fresh cherry tomatoes
2 T. lemon juice
1 T. balsamic vinegar
1/8 c. olive oil

Directions:
Directions:
Bring the water, bouillon cubes, garlic, and rinsed quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the water has been absorbed, 10 to 15 minutes. Scrape the quinoa into a large bowl.

Gently stir the olives, feta cheese, basil, and tomatoes into the quinoa. Drizzle with the lemon juice, balsamic vinegar, and olive oil. Stir until evenly mixed. Serve warm or refrigerate and serve cold.
