Ingredients:  
1 pound diced chicken (you can also use veal or lean pork)
Vegetable oil
2 cups diced celery
1 tsp salt
2 Tbsp corn starch
Chow Mein Noodles
2 cups chicken stock
2 cups diced onions
2 cups canned bean sprouts (drained)
1 cup water chestnuts (drained)
2 Tbsp soy sauce
Salt and pepper to taste

Directions:
Directions:
Fry meat for 5 minutes in vegetable oil. (drain)
Add the chicken stock.
Cover and simmer until the meat is tender.
Add the celery and onion, simmer for 10 minutes.
Add the drained water chestnuts.
Moisten the corn starch in a little water, add to your mixture.
Add bean sprouts and soy sauce.
Season with salt and pepper to taste
Heat thoroughly.
Serve over a bed of hard chow mein noodles.

This may not be an authentic version of an Asian chow mein, but this was the version we were served growing up in the Midwest and thought we were eating an exotic Asian dish!
