6 cups water
1 medium onion, chopped
1 stalk celery, chopped
2 carrots, sliced
1 bay leaf
salt & pepper, to taste
1 can chopped tomatoes, or 1 fresh tomato
3/4 cup elbow macaroni
1 lb. oxtails, with fat trimmed off

Directions:
Directions:
Put in all ingredients except tomatoes and macaroni, in large pot and cook at medium high until carrots are done. When ready, add tomatoes and macaroni and continue to cook until macaroni is done. Serve with a crusty bread.

May substitute beef shank meat for oxtails. May also add 1 can of beef broth.
