3 c. onion, chopped
2 tsp. kosher salt
3 (10 oz.) boxes frozen spinach, squeezed dry
butter
2 tbsp. olive oil
1 1/2 t. pepper-coarse
lemon-fresh
6 extra large eggs
1/2 c. Parmesan cheese, grated
1 1/2 c. Feta cheese
1 stick salted butter (for the Phyllo)
1/2 tsp. nutmeg
3 tbsp. dry bread crumbs
1 pkgs. frozen Phyllo dough, thawed

Directions:
Preheat oven to 375º. Saute the onion in oil until translucent; cool and add salt. Add the spinach, butter and a little salt and lemon juice to your taste. Add remaining ingredients except the stick of butter and Phyllo; stir to mix well. Lay 6 Phyllo sheets on top of each other on the bottom of a baking dish, brushing each sheet with melted butter. It may take more than 6 sheets to cover the entire bottom of the dish. Add the spinach mixture and top with 4 more layers of Phyllo dough (buttered between sheets) and brush melted butter on the top. Bake uncovered for 30 to 35 minutes.
