2 chicken breasts, cooked and pulled apart
4 c. good chicken broth
1 large potato, cubed
1 large carrot, cubed
1/2 t. seasoned pepper
1 can mixed vegetables
1 small can mushrooms
3/4 c. chicken broth
1/2 c. cornstarch
top and bottom pie crust

Directions:
Directions:
Cook vegetables in 4c. chicken broth until soft. Add canned vegetables (I usually leave out and use a small bag of frozen peas and carrots). Mix 3/4 c. chicken broth with cornstarch until smooth, add to vegetables, cook until thickened. Place in a uncooked pie shell and top with uncooked pie shell, crimp edges. Bake at 350º for 30 minutes or until golden brown.
