4 boneless, skinless chicken breasts-cut in small strips
4 garlic cloves, pressed
1 c. butter
1 pint heavy cream
1/2 to 1 c. crumbled gorgonzola to taste
shredded fresh spinach or basil
1 lb penne pasta
2 roma tomatoes, chopped

Directions:

Cook penne according to directions. Saute chicken in 4 T. of the butter with pressed garlic. Add the rest of the butter and cream to chicken, simmer 2 minutes. Add gorgonzola and spinach or basil. Toss into chicken and serve immediately with fresh tomatoes on top.

Mrs. Cox came up with this recipe after we had been to dinner with Mrs. Rust. We had ordered the chicken gorgonzola at the Macaroni Grill and we wanted to make it at home. This recipe is what Angie came up with and it has been a Watson family favorite ever since. It is a great recipe and even if you don't like gorgonzola you will like this dish. It is one of Barak's favorite meals and when he was running for NNU we would serve this to over 30 college kids. I would cook the noodles ahead, toss with a little olive oil and set aside and cook all the chicken. Then right before serving I would make the sauce and toss it altogether. It is best eaten the day you make it, with leftovers the butter separates and it tastes good but you lose your presentation.
