1 medium potato, peeled, cooked and mashed really well (do not add anything when mashing the potato )
2 Tablespoons flour
Food coloring
Peppermint flavoring
Icing sugar
Melted chocolate

Directions:
Directions:
Cook and mash potato and mix with the flour. Tint any desired shade with food coloring and add peppermint flavoring to taste. Work in as much icing sugar as possible to make it very stiff so you can shape it with your hands. Using a teaspoon of mixture for each mint,shape with your hands to make a flat mint. Dip edges or whole mint in melted chocolate.
You could also wrap a glace cherry inside the mint and the dip in chocolate.

These mints are very similar to the after dinner mint, only they are not so sweet ,as the potato cuts down on the sweetness.
