1/3 c. sorghum flour
1/3 c. potato starch
1/3 c. tapioca starch
1/4 tsp. salt, scant
4 large eggs
2 cups water or milk substitute
8 tsp. coconut oil, melted
Crepe fillings as desired (i.e. fruit, whipped cream, Nutella, scrambled eggs)

1) Microwave coconut oil until just melted.

2) Beat flour, salt, and eggs together in a medium bowl until smooth.

3) Beat in milk.

4) Add melted oil in a small, steady trickle, beating throughout. (The oil will be warm; mixing in slowly helps prevent it from re-solidifying into small lumps.)

5) Let batter set in the refrigerator for 1 hour.

6) Lightly grease fry pan and set stove to medium-high.

7) Spoon batter onto hot pan, tilting pan to coat the bottom.

8) When golden on one side, flip crepe.

9) Lightly fry on second side.

10) Set aside on a plate, place your filling inside, then roll up and enjoy!
