1 4lb. boneless pork shoulder roast
2 bay leaves
1 onion, quartered
3-5 garlic cloves
2C beef broth
1/4C lime juice

spice mix:
2 tsp salt
2 tsp garlic powder
2 tsp ground cumin
1 tsp dried oregano
1 tsp ground coriander
1/2 tsp ground cinnamon
2 tsp onion powder
2 tsp chili (ancho) powder
2 tsp pepper
2 tsp orange peel
2 tsp marjoram

Directions:

Heat 1T of oil in a pan over med-high heat, add the pork, sear on all sides.

Mix together the spices for the spice mix in a bowl with broth and lime juice. Place the bay leaves in the bottom of a slow cooker and place the pork on top with onion and garlic. Pour the liquids around the sides of the pork.

Cover and cook on Low until the pork shreds easily with a fork, about 8 hours. Turn the meat after it's cooked half way. When the pork is tender, remove from the slow cooker, and shred with two forks.Skim fat from liquid and keep 1C. Use this liquid to moisten meat if it is dry.

Spread meat out in a single layer on a baking sheet, broil until crispy on top, about 4-6 minutes, flip and broil until crispy, about 4-6 min.

Enjoy in tacos, burritos, quesadillas, etc.
