1 cup parsley
1/2 cup basil
1/8 cup cilantro
1/4 teaspoon chopped garlic (about one small clove)
1/2 cup walnuts (or pecans)
grated zest of 1 lemon
2 tablespoons fresh lemon juice
1/4 cup olive oil

Directions:
Directions:
Pulse parley, cilantro, basil, garlic, walnuts, zest and lemon juice in a food processors until coarsely chopped.

Add 1/4 cup oil in a steady stream and process until combined.

Season with salt and pepper

Hard one (but not impossible) to do without a food processor. I used my Nutri Bullet which took time and does not give it the consistency of a processor.

However, it is a delicious pesto recipe.

I served it over sweet potatoes but you could put it on any vegetable or pasta or fish or stirfry.
