1/2 cup mayonnaise
1/4 cup Thai sweet chili sauce
Three drops Sriracha Hot Chili Sauce. (or more to taste)
1 tablespoon of white balsamic vinegar
Juice of 1/4 to 1/2 lemon (to taste)

1 pound of shelled and deveined uncooked shrimp

Dry cornstarch
Oil for frying
Lettuce
Chopped scallions

Directions:

Mix mayonnaise with sweet Thai chili sauce. Add hot sauce to taste. Add white some balsamic vinegar and lemon juice.

Dredge the shrimp in cornstarch. Deep fat fried shrimp until lightly browned only a few minutes. Drain on a paper towel and put in a bowl. Coat the shrimp with the sauce. Served in a lettuce line bowl and top with scallions.

This recipe is stolen directly from the Bonefish Grill in Florida. It is so simple and so easy and so damn tasty. This is not necessarily a Ritchie family recipe from days of old but is certainly a staple in our entertainment menu these days.
