One sweet onion
Two large peeled tomatoes
One large cucumber pared
One medium green pepper
One pimento
212 ounce tomato juices
1/4 cup olive oil
1/3 cup of red wine vinegar
Tabasco sauce
1 teaspoon salt
1/8 teaspoon ground pepper
Three calls garlic mashed
1/4 cup chopped chives
One cup homemade garlic croutons

In a blender blend one tomato, one half of the cucumber, one quarter green pepper, 1/2 cup tomato juice. Then add olive oil, vinegar, remaining tomato juice, Tabasco, salt-and-pepper, and garlic. Refrigerate at least two hours. Chop the remaining tomato cucumber onion pepper and pimento and serve as a company months along with the croutons. I add a dollop of sour cream to each bowl as it is served.

This is mom's recipe for guest spot show and I traditionally leave out the green pepper and pimento just for my own personal tastes. She loved to make this on a hot summer day and it was always very tasty.
