2-1/2 to 3 lbs. chicken, cut up

1 tsp. salt
2 (4 oz.) cans mushrooms stems and pieces
6 green onions (with tops) chopped
2 large carrots, cut diagonally
1/4 cup soy sauce
1 Tbsp. sugar
1/2 tsp. ginger
3-1/2 oz. uncooked vermicelli

In Dutch oven, cover chicken with water, add salt then heat to boiling. Reduce heat, cover and simmer about 40 minutes. Cool chicken and broth. Remove chicken from broth; refrigerate broth and skim fat. Put chicken, broth and remaining ingredients except vermicelli in Dutch oven; heat to boiling. Reduce heat and simmer uncovered until carrots are crisp-tender, about 20 minutes. Stir in vermicelli and simmer until vermicelli is tender; about 5 minutes.
