5 1/2 oz. Sugar
5 1/2 oz. Shortening
1 egg
10 1/2 oz. flour

Combine all ingredients until well mixed.

Form into balls and put on greased cookie sheet. Press thumb in each ball of dough to make an indentation for icing.

Bake in 350 degree preheated oven for 15 to 20 minutes until lightly browned.

When cool, add icing to the indentations. You can use your favorite buttercream icing or make up your own simple icing by combining powdered sugar and water or milk until the desired consistency (add a dash of vanilla and a smidgen of butter for extra flavor, then add a few drops pink food coloring).

This was the recipe for Van Underwood's famous cookies. Van ran the bakery on Petersburg's Main Street for many years and was known for these famous cookies. The original recipe listed such large amounts that cutting it down to a reasonable size makes for usual measurements. I just used a clear liquid measuring cup and estimated the ounces called for and it worked out. Also, the indentations didn't make much of a dent so I just plopped the icing on top of the cookie. It might have been a different consistency since I used coconut oil instead of Crisco.
