1 lb. boneless chicken breast, cubed
1 Tbsp. oil
3 cans chicken broth
3 cups water
4 medium carrots, chopped
1 medium onion, chopped
2 stalks celery, chopped
2 potatoes, cubed
1 can whole tomatoes
1 tsp. parsley
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1/4 cup rice or barley (optional)

Dumplings:
3 Tbsp. shortening
1-1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
3/4 cup milk

Directions:
Directions:
Brown chicken in a skillet with a little oil until nearly cooked. Drain, then add to the remaining ingredients in a saucepan. Bring to a boil; lower heat and continue cooking until vegetables are tender. To make dumplings, cut shortening into flour, baking powder and salt with pastry blender until resembling fine crumbs. Stir in milk. Drop by teaspoons onto hot soup. Cook uncovered about 10 minutes. Cover and cook about 10 minutes longer.
