Watermelon Rind
2 tsp. alum
2 pounds sugar
1 pint vinegar
1 tablespoon each of whole cloves

Prepare rind-cut in pieces. Cover with alum water, allowing 2 teaspoons powdered alum to each quart of water. Heat to boiling, and let stand for 2 hours. Remove alum water and chill in ice water. Make syrup by boiling together for 5 minutes 2 pounds sugar, 1 pint vinegar, 1 tablespoon each of whole cloves and stick cinnamon tied in a piece of white muslin. Add watermelon and cook 10 minutes. Remove pickles to a crock and pour over syrup. Scald syrup 3 successive mornings and return to pickles Put in jars and seal. Cucumbers may be used instead of watermelon.
