1 day-old loaf crusty Italian bread, cubed
1/4 c. extra-virgin Olive Oil. divided
1/4 c. fresh basil, roughly chopped
1 pkg. grape Tomatoes, halved
1 small sweet read onion, halved and thinly shipped.
2 Tbsp. balsamic vinegar
1/2 cu. fresh mozzarella cheese, cubed
Salt and pepper, to taste

Directions:

Heat the oven to 400 ºF. Toss bread cubes with half the olive oil. Spread on baking sheet and bake for 10-12 minutes, turning the bread cubes once or until bread is lightly toasted on both sides. In a large bowl, combine toasted bread with all other ingredients. Toss and serve. Refrigerate any leftovers.
