1 cup rice
3/4 cup chopped onion
1/2 cup almonds, chopped
1 Tbsp. butter
2 cups chicken broth (or use beef, if desired)

Directions:
Directions:
Put everything in a 2 qt. casserole and microwave for about 20 to 30 minutes or until liquid is absorbed and rice is tender. You may add any kind of vegetable you prefer such as diced carrots, peas, broccoli, etc. before cooking.

If using brown rice it takes longer to cook and may need more liquid.
