1 large onion, chopped
1 clove garlic, chopped
2 Tbsp. butter
2 Tbsp. vegetable oil
1-1/4 cups rice
1 can (16 oz.) tomatoes
1 can (14 oz.) chicken broth
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Sauté onion and garlic in butter and oil. Stir in rice, tomatoes, broth, salt and pepper. Cook slowly about 15 or 20 minutes or until rice is tender and liquid is absorbed. Fluff.
