Meatloaf
2 tbsp. margarine
3/4 c. finely chopped onion
1/4 c. chopped green pepper
1-1/2 - 2 lbs. lean ground beef
1 c. quick rolled oats
2 eggs, beaten
3/4 c. tomato juice
1/4 c. prepared horseradish
2 tsp. salt
1 tsp. dry mustard

Topping
1 to 3 tbsp. brown sugar
1 tsp. dry mustard
1/4 c. ketchup

Directions:
Meatloaf: Saute onion & green pepper in margarine for about 5 minutes or until onion is soft. Meanwhile, lightly mix beef and oats in a large bowl. Combine eggs, tomato juice, horseradish, salt and mustard; add to meat mixture and mix lightly. Turn in a 9 X 5 X 3 inch loaf pan and press lightly.

Topping: Mix ketchup, brown sugar and mustard and spread over meatloaf.

Bake at 375º F. for about 1 hour. Remove from oven and allow meat to stand several minutes before slicing.
