1 Large Head Cauliflower (cut in bite size pieces-approx. 6 cups)
6-8 Strips Bacon (fried & crumbled)
6 TBLS Chives (chopped)
1/2 Cup Mayonnaise
1/2 Cup Sour Cream
2 Cups C0lby Jack Cheese (shredded)
1 (8 oz) Can Sliced Mushrooms

Directions:
Directions:
In a large pot, boil water & cook cauliflower for 8-10 mins, drain & let cool. In a large bowl, combine sour cream, mayo, 1/2 of crumbled bacon, 3 TBS chives, 1 cup cheese, mushrooms & cauliflower. Mix well. Place in baking dish & cover with remaining 1 cup cheese & rest of bacon. Bake at 425 for 15-20 mins until cheese is melted. Top with remaining 3 TBLS chives & serve.
