2 whole chicken breasts, cooked and cut into bite sized pieces
2 tbsp. canola oil
3 c. rice (cooked)
3 - 4 eggs
garlic powder
salt and pepper
mushroom soy sauce*
green onions, sliced (optional)
*Can be obtained at Asian store in Coco Plaza on PSL Blvd. next to turnpike overpass.)

Directions:
Directions:
Season chicken with garlic powder, salt and pepper, and mushroom soy sauce to flavor and color, but not too dark. In a large stock pot, add 2 tablespoons vegetable oil and let heat; add chicken pieces and brown. When browned, remove from pot and set aside. In the same pot, make sure there is a thin coat of oil remaining (if not, add some); break eggs into stock pot and stir until yolks are broken. When eggs begin to cook, immediately add cooked rice and blend rice and eggs together. While stirring rice and eggs together, sprinkle some mushroom soy sauce over rice to get an even color. Do not get too dark; the darker the saltier. Add cooked chicken back to pot and mix into rice. Top with sliced green onion if desired and serve with your favorite entrée. Enjoy!
