1/2 large onion, chopped
1/8 c. chopped green pepper
3 Tbsp. butter
1/4 c. all-purpose flour
1 1/2 c. chicken broth
5 oz. diced tomatoes and green chilies
1 Tbsp. chopped jalapeno pepper, optional
1/2 tsp. ground cumin
1/2 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. salt
8 oz. can chili with beans
4 oz. cream cheese, cubed
4 c. cooked, cubed chicken
12 flour tortillas (6 inch) warmed
3 c. (12 oz.) shredded colby-monterey jack cheese
salsa, optional

Directions:
Directions:
In a large skillet, saute onion and green pepper in butter until tender. Stir in flour until blended. Gradually stir in broth. Bring to a boil; cook and stir for 2 minutes. Reduce heat; add the tomatoes, jalapeno pepper if desired and seasonings. Cook for 5 minutes or until heated through. stir in chili and cream cheese until cheese is melted. Stir in chicken. Spoon about 1/2 cupful down the center of each tortilla; sprinkle each with 1/8 c. colby-monterey jack cheese. Fold ends and sides over filling. Place in a greased 9x13 pan. Cover and bake at 350º for 35-40 minutes or until heated through. Serve with salsa.
