4 chicken breasts boneless
½ cup bread crumbs
¼ cup flour
¼ cup parmesan cheese
1 egg beaten
1 cup mozzarella
½ cup basil tomato sauce

Directions:
Directions:

1. Lay out 3 plates, 1 for flour, 1 for beaten egg, 1 for breadcrumbs + parmesan
2. Lay a large sheet of plastic wrap on countertop.
3. Put 2 breasts at a time on and then another layer over top of chicken.
4. Pound with a heavy coffee mug until ½ inch or so thick. About ½ what you started with
5. Do the next batch
6. Dip each breast in flour, then egg, then breadcrumb mixture
7. Put good drizzle of cooking oil in heavy frying pan.
8. Brown each breast 4 minutes or so on each side. Do not cook all the way.
9. Put on cookie sheet and spoon tomato sauce and then mozzarella cheese.
10. Bake 350 for 15 minutes or chicken is fully cooked. Don’t over cook.

I use the same crumb mixture method for making my own chicken fingers. Of course, you cut up the chicken in large slices for fingers and cook all the way through. Awesome! Great as left overs as well.
