2-1/2 lbs. redskin potatoes, diced
3 T. olive oil
8 eggs, beaten
1 t. salt
1/2 T. pepper
8 slices bacon, crisply cooked and crumbled
3/4 c. French onion dip
3/4 c. shredded sharp Cheddar cheese
1/2 c. green onions, chopped

Directions:
Directions:
In a skillet over medium heat, fry potatoes in oil until tender. In a separate lightly greased skillet, scramble eggs until fluffy; season with salt and pepper. Fold bacon, dip and cheese into potatoes; stir in scrambled eggs. Sprinkle green onions over top.
