1 lb. mild breakfast sausage
1/3 c. all-purpose flour
3 to 4 c. half and half
salt and pepper to taste (fresh cracked pepper is best)

Directions:
With your fingers, tear small pieces of sausage into a heavy skillet. Brown sausage over medium-high heat until no longer pink. Reduce heat to medium-low. Sprinkle flour over the sausage, a little at a time, until the sausage soaks it all up. cook for a few minutes after all the flour has been added. Pour in half and half and stir constantly until it thickens. This may take 10 to 12 minutes. Taste and adjust salt and pepper to taste. Spoon the sausage gravy over fresh-baked biscuits. Makes 12 servings.
