2 c. all-purpose flour
1/4 tsp. kosher salt
1 tbsp. sugar
1 1/2 tsp. baking powder
6 tbsp. lard
6 tbsp. unsalted butter, chilled
1 1/2 tsp. cider vinegar
1 large egg, beaten

Directions:
Directions:
Place flour, salt, sugar, and baking powder in a food processor; whir to combine. Add lard and butter, in chunks. Whir for several seconds, then pulse until crumbly, DO NOT PULVERIZE. Dump into a large bowl and cut with pastry cutter until crumbly. Whisk vinegar and beaten egg with 3 1/2 tbsp. cold water. Add all at once to flour mixture. Whisk vigorously with a fork just until the dough comes together. (Do not over mix; this results in a tough crust.) Shape into two balls. Wrap in plastic wrap or a zip lock bag and refrigerate for at least 30 minutes. Place one ball onto floured parchment paper. Lightly flour the top of the dough ball. Place a second sheet of parchment paper on top of dough. Roll out. Place into a 9" pie plate. Makes two crusts.
