1 bag ham cubes
Bacon (cooked, then crumbled)
Turkey sausage (cooked) (can use reg sausage if desired)
1/4 to 1/2 of small brick light velveeta cheese (light)
1 bag shredded cheese (light or reduced fat)
16 eggs
spinach (chopped)
1 green pepper (diced)
onion (diced)
salt and pepper to taste

Directions:
Directions:
Preheat oven to 350
Spray 9x13 baking dish with cooking spray
Whisk eggs, velveeta, spinach, and salt and pepper together in bowl. Set aside.
Brown sausage with onion and green pepper, drain grease.
Pour sausage and ham in the egg mixture and stir together.
Put all the mixture into the 9x13 baking dish. Top with shredded cheese. Put bacon crumbs on top of the cheese.
Bake covered with foil for 30 min. Uncover and bake an additional 20-30 min, or until cheese is melted and slightly browned.
Serve with light cream cheese, light sour cream (or non-fat plain Greek yogurt in place of sour cream), and salsa
