1 bunch asparagus, trimmed
1 cup mayonnaise ***
2 tbsp. lemon juice
1 tsp.. each garlic & onion powder,
2 tsp. paprika
1/2 cup crushed Ritz crackers
1/4 cup. chopped parsley
1/2 cup freshly grated Parmesan cheese
OR
1/2 cup shredded Mozzarella cheese

Preheat oven to 425 º.
Place asparagus on a foil-lined cookie sheet. Lightly brush asparagus with olive oil, salt and pepper. Place into oven and bake 10 minutes. Remove, lower oven to 375º. Mix together mayonnaise, lemon juice paprika, onion powder and garlic powder. Place asparagus into a glass casserole dish and cover with mayonnaise mix. Mix together Ritz crackers and chopped parsley. Sprinkle on cracker mixture and then one of the cheeses. Place back into 375º oven and bake another 15-20 minutes.
