★ 1 loaf sliced dark rye bread, remove crusts
★ 1 pound thin sliced deli corned beef
★ 1 quart sauerkraut, undrained
★ ½ cup brown sugar, packed
★ 2 lbs. Swiss cheese, thinly sliced
★ 2 cups Thousand Island dressing
★ ½ tsp. ground dry mustard

Lay the slices of bread on a cookie sheet and toast at 400º for 8 minutes. Spray a 8½x14 deep baking dish with cooking spray. Lay ¾ of the bread on the bottom of pan, crumble and set aside rest in small bowl. Layer on top of the bread, corned beef, sauerkraut, brown sugar, Swiss cheese, and Thousand Island dressing. Toss dry mustard and bread crumbs with a fork and sprinkle on top of dressing. Bake at 350º, uncovered, for 1 hour or until bubbling around edges of pan. Cool 5 minutes before slicing and serving. Serves 8 to 12.
