3 lemons - zest 2, juice 2, slice 1
1 T. olive oil
1 T. minced garlic
2 c. heavy cream
salt and pepper
1 lb. fusilli pasta, dry or rotini
1/2 lb. baby arugula
1/2 c. freshly grated parmesan
1 pint grape tomatoes, halved

Directions:

Saute garlic in oil, don't brown. Add cream, zest, and juice of 2 lemons, 2 t. salt, 1 t. pepper. Simmer 15-20 minutes until thickened. Add cooked and drained pasta to sauce and cook for 3 minutes. Toss with parmesan, arugula and tomatoes. Garnish with fresh sliced lemons on top. Serve warm. Can add cooked broccoli.

This is a great recipe when you have home grown arugula and home grown cherry tomatoes! I love lemon and this sauce can be used on any pasta. You can add chicken if you want to make it more of a main meal.
