1 bunch asparagus
1 cup mayonnaise (or 1/2 Miracle Whip)
1 tbsp. lemon juice
1/2 cup seasoned bread crumbs * see below
2 tbsp. dried (or fresh) parsley
1 tsp. Garlic powder
1 tsp. onion powder
1/2 tsp. Paprika
1/2 cup freshly grated Parmesan cheese

Preheat over to 425 deg. Lightly oil asparagus with olive oil, salt & pepper and place on cookie sheet. Bake for 8 minutes. Remove cookie sheet, lower oven to 375 deg., place asparagus into glass dish. Combine mayonnaise, parsley, garlic powder, onion power and paprika. Cover asparagus with toppings and place back into oven for 15 minutes. Sprinkle with Parmesan cheese.

*** I would have preferred to have used fresh bread crumbs and fresh Parmesan cheese but was in a rush and didn't have any.

* May also use crushed Ritz crackers (instead of bread crumbs) and sprinkle with shredded mozzarella cheese

* OR add crisp, diced bacon

Try this with broccoli (out of this world) or squash. Just let your imagine carry you away!!!
