Ingredients: Crepes: 6 eggs 2 c milk 2 c flour 1 tsp salt 2 tbsp sugar
Cottage Cheese Filling: 1 package dry cottage cheese 2 egg yolks black pepper to taste 2 - 3 tbsp whipping or half-and-half cream 1 tsp dill

Directions:Crepes: In a mix master or food processor, beat eggs well and add the milk, flour, salt and sugar. Using a tablespoon, drop batter onto a lightly greased hot pan or griddle. Crepe should be very thin and 2" x 4" in size. Makes approximately 60 crepes.
Filling: Mix all ingredients in a food processor or with a beater until cheese mixture has a consistency of a paste.
Assemble: Spread cheese mixture on crepe and roll. Place rolls in a casserole dish and pour the 2 cups of whipping cream on top.
Cover and bake in a preheated 350º oven for 3/4 to 1 hour. Serve hot.
Note: These can frozen on a cookie tray and bake in smaller amounts as required. Just adjust your final amount of whipping cream when baking. |
