1 c. raw pumpkin seeds, rinsed and dried
6 tbsp. white sugar, divided
1/4 tsp. salt
1/2 tsp. pumpkin pie spice
1 tbsp. oil

Directions:
Directions:
Preheat oven to 250 degrees F. Spread pumpkin seeds in a single layer on a baking sheet. Toast for 30 minutes, stirring occasionally until dry. In a bowl stir together 2 Tbsp of sugar, salt and pumpkin pie spice. Set aside. In a large skillet, heat oil over medium-high heat. Add seeds and sprinkle with remaining sugar. Stir with a wooden spoon until the sugar melts, about 45 seconds. Spread on a cookie sheet and bake 10 more minutes until crispy. (Bake carefully as they will burn easily.) Pour seeds into the bowl with the spiced sugar and stir until coated. Allow to cool before serving. Store in air tight container.
