2 tbsp. olive oil
1/2 c. chopped onion
2 cloves garlic, pressed
30 oz. canned tomato sauce*
30 oz. canned tomato puree**
1 c. water
2 tbsp. minced fresh parsley
1 tsp. salt
2 tsp. Italian herbs
1 tbsp. dried oregano
1 tsp. dried basil
1 tsp. dried marjoram
1/4 tsp. black pepper
1 bay leaf

*3/4 c. tomato paste + 1 c. water = 15 oz. tomato sauce
**Put can tomatoes in blender for a few seconds to puree or use 5-6 fresh tomatoes. Peel, chop, and puree.

Meatballs:
1 lb. ground beef
1/2 lb. ground pork*
2 eggs, slightly beaten
1/2 c. fine bread crumbs
1/4 c. fresh parsley
1/4 c. parmesan cheese
3 tbsp. white wine
1 garlic clove, pressed
1 tsp. salt
1/4 tsp. black pepper
1/4 tsp. oregano
1/8 tsp. dried basil
1/8 tsp. baking soda
2 tbsp. butter
2 tbsp. oil

Directions:
Heat oil. Saute onion and garlic until onion is golden. Add tomato sauce, puree, water, salt, and seasonings. Cover and simmer for 45 minutes. Prepare meatballs. Add meatballs to sauce. Cover and simmer 20 minutes longer.

Meatballs:
Mix meats, eggs, bread crumbs, parsley, cheese, spices, wine and soda. Shape into meatballs. Fry in butter and oil over low heat, browning on all sides. *Can use all beef instead of pork.
