4 kg beef roast, cut into large chunks (topside, not fillet)
3 tbsp. liquid smoke
Onion salt, to taste
Garlic salt, to taste
Celery salt, to taste
1/4 c. worcestershire
1/4 c. water
2 1/2 c. ketchup
1/4 c. vinegar
1 tbsp. worcestershire sauce
1 tsp. salt
1 tsp. onion powder
1/2 tsp. liquid smoke
1 small clove garlic, crushed

Directions:

Mix together liquid smoke, onion salt, garlic salt, celery salt and pour over meat. Marinate over night in a covered container. The next day, combine 1/4 c. worcestershire and 1/4 c. water. Pour over meat. Cook on a rack in a pressure cooker for 1 hour. Reserve 1/2 c. of liquid from meat. Shred meat. Combine remaining ingredients and reserved liquid; blend together to make sauce. Add desired amount of sauce to meat. Store remainder of sauce in an airtight glass container.
