6 c. diced potatoes
2 c. sour cream (or strained plain yogurt) with 1 tsp. salt added
1/2 c. butter or margarine, melted
1/2 c. chopped onion
1 c. grated cheddar cheese
1/4 tsp. pepper
2 tsp. salt

White sauce:
3 tbsp. margarine
3 tbsp. flour
1/2 c. chicken broth
1/2 c. milk
1/4 tsp. poultry seasoning

Topping:
1/4 c. butter or margarine, melted
2 c. crushed cornflakes

Directions:
Directions:
Combine potatoes, sour cream, butter, cheese, onion, pepper, salt, and white sauce. Can use a can of condensed cream of chicken soup instead of white sauce and reduce salt by 1 tsp. Pour mixture into greased 9x13-inch baking dish. Combine topping and spread evenly over potatoes. Bake at 350 degrees F for 45 minutes. This can be made a day ahead of time and kept in the refrigerator until the next morning.
