4 c. or more cooked rice, can use leftover rice
1 large onion, chopped
1 c. celery
1/2 - 3/4 c. sliced almonds
Butter

Directions:
Directions:
Melt 2 Tbsp butter in large skillet. Saute celery over med heat until tender. Remove from pan. Repeat with onion and sliced almonds adding 1 Tbsp butter to each if needed. After all is cooked, return all to pan with cooked rice. Saute all together, 10-15 minutes, adding salt and pepper to taste.

This is really nice with grilled meats and shish-kabobs and is a nice change from potatoes. Sometimes I use onion, mushrooms (fresh is best but canned works), and bacon. My mom got this from my Dad's older sister. Really easy to make and adapt to ingredients on hand.
