4-5 medium potatoes
6 slices bacon, diced
3/4 chopped onion
2 tbsp. flour
1-1 1/2 tbsp. sugar
1 1/2 tsp. salt
1/4 tsp. pepper
3/4 c. water
1/4-1/3 c. vinegar
1/4 c. young tender sweet peas (optional)

Directions:
Directions:
Boil unpeeled potatoes until tender; peel and slice fairly thin. Fry bacon and onion together until onion is tender and bacon is crisp. Blend in four, sugar and pepper; cook over low heat, stirring constantly, until smooth and bubbly. Stir in water and vinegar; return to boil. Remove from heat; gently stir in potatoes and peas. Serves 4-6.

We like less vinegar. Frozen peas work best, if available.
