2 tbsp. olive oil
2 large cloves garlic
1 tbsp. sugar
1 tsp. cumin
1/2 tsp. salt
1/2 tsp. cinnamon
2 lbs. carrots, cut diagonally into 1-inch pieces
1/2 c. white raisins
Juice of 1 lemon
1/4 c. chopped parsley or cilantro (dahnia)

Directions:
Directions:
Preheat oven to 400 degrees F. Combine oil, garlic, sugar, cumin, salt, cinnamon, and carrots in a shallow baking pan. Roast for 20 minutes or until fork tender. Remove from oven and add raisins, lemon, and parsley. Toss well and serve.
