1 c. finely chopped celery
1 c. chopped green pepper
1/2 c. sliced scallions OR chopped onions
1-2 c. diced tomatoes
1 c. chopped cucumbers
Chopped chives (optional)
Chopped parsley (optional)
2-3 tbsp. vinegar or lemon juice
1 tsp. sugar
1/2 tsp. salt
Dash freshly ground pepper

Directions:

Combine all ingredients in a bowl. Stir thoroughly and chill. Serve as salad or as relish (chutney) with rice and curry. (From More With Less)
