3 c. coarsely grated sharp cheddar
1/4 c. + 2 tbsp. butter
1 c. whole wheat flour
1/2 c. white flour
1/2 tsp. onion or garlic powder
1/4 tsp. salt

Preheat oven to 350 degrees F. Combine all ingredients in a food processor or stand mixer, running the machine until the dough forms a ball, about two minutes. (I tried to do this step by hand so I wouldn’t be dependent on a machine, but the dough would not come together.) Wrap dough in waxed paper or plastic wrap and chill for 30-45 minutes. On a lightly floured surface, using a lightly floured rolling pin, roll the dough out 1/8-inch thick. I prefer them thin because then they are more crispy. Form shapes with a cookie cutter, dipping it in flour from time to time to ensure a clean cut. I used a pizza cutter and cut the dough into 1-inch squares and called them “fish sticks.” Gently transfer crackers to an ungreased or parchment-lined cookie sheet with a 1/2 inch between them. If making fish, use a toothpick to poke a hole for the eye (and so the crackers don’t puff up) and draw a smile. If making “fish sticks,” use a fork to poke holes in each cracker. Bake the on the middle rack for 12-15 minutes, or until they are barely browned at the edges. Remove from the oven and set the cookie sheet on a rack to cool.
