3 tbsp. corn oil
6 cloves garlic, finely chopped or pressed
1 tbsp. fresh cilantro (dahnia)
1 c. fresh onion puree (about 3 small onions blended)
2 c. fresh tomato puree (stewed tomatoes blended)
1 tbsp. cumin powder
2 tsp. chili powder
2 tbsp. tomato paste
2 qts. chicken stock
Salt to taste
Cayenne pepper to taste
2 chicken breasts, cooked and diced
1 avocado, diced or cubed
1 c. cheese, shredded
Flour tortillas, baked and crumbled
Bay leaves

Directions:
Heat oil in large sauce pan, over medium heat. Saute garlic and cilantro. Add onion and tomato puree and bring to boil. Add cumin, chili powder, bay leaves, tomato paste, chicken stock and cayenne pepper. Bring to boil again, then reduce heat to simmer. Add salt. Cook, stirring frequently, for 30 minutes. (At this point, you can whisk in a flour/water mixture to desired thickness) Garnish each bowl with avocado, cheese and tortillas, or let each person add their own. You can also add carrots, corn, cooked black beans or whatever sounds good to you. ENJOY!
