2 tbsp. margarine
1 1/2 tbsp. cornstarch
1 c. milk
1 lb. Velveeta, cubed
1 can Rotel, pureed
1 tbsp. chili powder
1 tbsp. whole cumin seed (do not use ground)
1/4 tsp. garlic powder

Directions:
Directions:
Make a thick white sauce with the first three ingredients. Add the cheese and stir until melted (use low heat to keep from scorching the precious Velveeta!). Heat the tomatoes and add the chili powder, cumin, and garlic powder. Pour the tomato mixture into the cheese sauce and stir to blend. Serve with posho chips.

An elder at the church I grew up in created this recipe, and I’ve never been able to eat regular “Rotel” since I grew up on this fancy version. Although it requires ingredients from the States, it’s worth saving your Velveeta for. It’s been requested again and again over the years.
