3 cloves garlic, crushed or finely chopped
1 large onion, chopped
2 tbsp. olive oil
2 quarts chicken broth
3 lbs. potatoes, peeled and thinly sliced
1 1/2 tsp. basil
1 1/2 tsp. salt
28 oz. crushed tomatoes or equivalent chopped
1 lb. spinach, coarsely chopped

Directions:
Directions:
Saute garlic and onion in oil. Add broth and bring to a boil. As you slice potatoes, add them carefully to the broth. Add basil, salt, and tomatoes if they are fresh. Cook for 20 min. Potatoes will begin to break up and thicken the soup. Stir in spinach. Cook until spinach is wilted. Serve with parmesan on top and fresh bread.
