2 envelopes active dry yeast (or 4 tsp)
6 cups all-purpose flour
1/4 - 1/3 cup olive oil
2 teaspoons salt
Dried basil and oregano to taste.
2 cups hot tap water

Directions:
Directions:
Place yeast on the bottom of the mixing bowl and completely cover with the flour. Since we use very hot tap water, the flour will protect the yeast until we actually begin mixing. The hot tap water assists with warming all the ingredients but can kill the yeast if it touches it first.

Add salt, herbs and oil on top of the flour. Finally add the hot tap water. Mix with mixing spoon or dough hook, if using an electric mixer. Mix until a dough forms. Then hand kneading until a smooth ball is formed. Kneading with dough hooks is perfectly acceptable. The dough, due to the olive oil, is a tender, smooth dough.

Divide into three equal portions. Shape into smooth balls, cover and rise until doubled.

Shape into your pizza pan. Cover with desired toppings. Bake in hot oven (450-500°) until crust is golden and cheese is melted.
