2 tbsp. butter
1/2 c. milk
2 eggs
1/2 tsp. vanilla
1/4 tsp. salt
1 1/2 tbsp. maple sugar
(I use regular sugar, but maple syrup or honey might work)
1/3 c. whole wheat flour

Directions:
Directions:
Preheat oven to 425 degrees F. Melt butter in an oven-proof 8-inch pan in the oven. While butter is melting, whisk together milk, eggs, vanilla, salt, and sugar. Add flour, but do not over mix. Lumps are ok. Pour flour mixture over melted butter. Do not mix. Bake for 20 minutes. Toppings: 2 dollops cultured cream cheese - mix until smooth with maple syrup, then add whole milk Greek yogurt (or whatever yogurt you can find) until light and fluffy. Top with fruit and mix with lemon juice. I sometimes just serve with syrup and/or powdered sugar. Serves 2. Can be double and use a 9x13-inch pan to serve 4.
